The heart behind the bake

The Family behind The Good Rolls, whose love for simple, homemade food inspired this fresh-milled cottage bakery in Lubbock, Texas.

Hi, I’m Alli — baker, wife, mom, and the hands behind The Good Rolls.

This bakery began with a simple desire: to make the kind of baked goods I feel good about serving my own family. The kind of food that brings people together around the table and makes ordinary moments feel a little more special.

When I discovered fresh-milled flour, I knew I had found the way I wanted to bake. The flavor was richer, the ingredients were simpler, and it reminded me that some things are worth doing the old-fashioned way.

Today, every batch is made with fresh-milled flour and real ingredients — nothing artificial, nothing unnecessary. My hope is that every box you take home feels like it came from a friend’s kitchen: warm, thoughtful, and made with care.

That’s what The Good Rolls is all about.

why fresh milled flour?

Freshly milling flour before every bake is one of the simplest ways I can serve my family — and yours — with real ingredients and incredible flavor.

Nothing stripped away

When flour is freshly milled, all the good stuff from the whole grain stays right where it belongs — things like fiber, B vitamins, and minerals your body actually needs. Nothing is stripped away, nothing added back in.

Gentler by nature

Many people find fresh-milled flour gentler than highly processed white flour because it still contains the grain’s natural oils and enzymes.

Nothing unnecessary

With fresh milled flour, there’s no need for bleach, preservatives, or shelf—life enhancers. Just freshly milled grain, exactly as nature intended.

More satisfying

Because fresh-milled flour still contains the whole grain, many people find it more satisfying and enjoy steadier energy than baked goods made with refined flour.
